If you have ever traveled in Europe or many of this country’s larger cities and purchased really good bread, you probably wondered why nobody bakes this good bread in northwest Wisconsin. So did we!
So we researched Brick Oven bakeries including a visit to the “Bread Alone” bakery in upstate New York. The bread was excellent and it looked like an enterprise badly needed here in Northwest Wisconsin. In March of 1997, Mike began experimenting with low fat “European Style” breads in his electric oven at home. By filling the oven with fire brick he was able to achieve bread of excellent quality.
Next he investigated building a brick oven of his own.
